Alternate growth-ring orientation across the glue-up and let the boards acclimate in your shop for a week or two before milling; flatness is won before the first glue joint.
Recommended joinery
A table's weak point is the leg-to-apron connection, which must resist racking (side-to-side wobble) for decades, and the top must be attached in a way that lets it expand and contract.
Mortise and tenon (legs to aprons)
The gold standard for frames: the tenon is trapped mechanically and can't rack, twist, or pull out without shearing wood, and the large glue area adds to that. This is why traditional tables survive generations.
Loose/floating tenon (Domino, dowels)
Nearly as strong as an integral tenon in testing and much faster; a good modern substitute for the apron joints.
Wood buttons or figure-8 fasteners (top to base)
Not for strength but for movement: they hold the top down while letting it expand and contract across the grain, preventing the cracking that rigid attachment causes.
